White Oyster mushrooms are medium to large in size with caps averaging 5-25 centimeters in diameter, very similar to blue in texture they have a fresh fruity smell and flavor. They have very little stems compared to other oysters and are tender. They cook very well, holding up well to high temperatures maintaining their texture and developing complex flavours.
