King Oysters require cooler temperatures to fruit well, ideal temperatures are 15-16c. Temperatures above 20c may cause the block to fruit poorly or not at all.
King Oysters are a harder to grow compared to other oyster varieties, they require more care and more controlled conditions. The yield from each grow block will be a direct correlation of the growing conditions and skill level of the grower. Instructions can be downloaded using the link above.
Mushroom grow kits are directly pulled from our crop lines, these are the same blocks we use to produce the mushrooms and results in our pictures. Our farm blocks are much larger than typical grow at home kits, averaging 4.6-5kg per block resulting in much larger flushes and the potential for huge harvests.
Mushroom grow blocks will have 1-4 flushes (harvests) depending on outside factors such as grow conditions etc
King oyster mushrooms are medium to large in size and are easily identified by their thick cylindrical stem and their small, flattened cap. The ivory to white stems can grow up to twenty centimeters in length, five centimeters in diameter, and are firm, dense, and chewy. The small, smooth caps are grey to brown and have rounded, curved edges. Underneath the cap, the stem and cap are joined by off-white, thin, short, gills. Raw King Trumpets, though dense and spongy in texture, lack aroma and flavor, but when cooked, the mushrooms have a savory umami flavor, a soft, crunchy texture, and a mild flavor reminiscent of abalone.
King Oyster mushrooms are beautiful giants. These mushrooms are true kings in the kitchen, with similar qualities to tofu – they absorb all flavor they encounter and are appreciated in all types of dishes. King Oyster mushrooms have a rather firm texture, but once cooked it is excellently chewy and incredible to bite into.
King oyster mushrooms are best suited for cooked applications such as grilling, roasting, baking, sautéing, and frying. They can be sliced or torn into thick pieces and simmered or braised to create a crispy texture, or they can be cut into rounds to develop a tender, meat-like consistency.
It is also possible to shred King oyster mushrooms into the consistency of pulled pork for vegan pulled meat alternatives. King Oyster mushrooms are commonly used in stir-fries, soups, stews, tempura, chopped into meatballs or meatloaf, mixed into pasta, or grilled and served on top of barbecued meats. King Trumpet mushrooms pair well with legumes, grains, fish, poultry, scallops, Asian greens, ginger, garlic, chives, chiles, thyme, rosemary, peppercorn, soy, vinegar, dry white wines, blue cheese, grapes, and focaccia.
